I'm wondering if mind blast will have any effect on undead creatures. i know the undead are immune to mind affecting spells but at the description of mind blast they don't say it is a mind affecting ability.

It will have no effect. Even if you ruled that a mind blast was not a mind-affecting effect, undead are immune to stunning.
