I have Lords of Darkness(3E) and Unapproachable East(3E) do the earlier resources provide more details on Thay or do the above two products cover most of what is available in print outside the various novels ?

I'd recommend the 1st edition Dreams of the Red Wizards and the 2nd edition Spellbound. The first edition source does the best job I feel of giving the general feel of the area, the government, culture, nobility, etc... The second edition resource did a really good job of updating recent happenings. The third edition resource was a much better "crunch" resource.

Do you mean earlier edition resources or just other 3E resources?
I don't recall from the top of my head, but I can try and take a look when I have them near at hand later.
